I'm using the shiny white shader in a series of renderings and it seems to be working okay. In this one series, there seems to be too much contrast. Do you guys have any advice in dealing with this? Is it an environment or shader issue?

Have you tried using the "Smooth White" plastic material? You will be able to dial in the reflectivity and shininess by adjusting the IOR and Roughness parameters on it. The higher the IOR, the more reflective the material. The more rough, the less shiny the material.

place a white plane behind your entire model, not too close. Make sure it's bigger than what the camera sees. Once your object looks better just change that plane to faded (it's where you hide models in the model tab). Faded makes everything see an object except the camera. So it casts shadows, reflection, is visible to all of those, etc.
This is a Very necessary trick if you have transparent objects and want to render on a white background.
The dark is most likely because what's behind your model is dark. Reflections don't see the solid color. They see the original environment. So turn that back to visible so you can see what you're getting. Then switch it back to white when you're closer to render time.
